Does the eye color of your Australian Shepherd make
any difference in breeding? By that I mean is it a danger or risk of eye problems to have the mother and father have blue eyes?

No. As long as it isn't a merle/merle breeding, eye color doesn't matter. Pups of a blue eyed tri and a merle will be as normal as those of a brown eyed tri and a merle.
